Summer season is upon us and that means some of the best fresh ingredients are available for your palate pleasure. Today's recipe uses juicy watermelon, fresh garden basil, fresh mozzarella cheese, drizzled with a balsamic vinegar glaze and topped for fun with a blueberry. I'm not sure about you but watermelon is definitely a favorite in our household and just screams summer time!
Back in the day I think there was no such thing as seedless watermelon, right? (I mean way back 🙂 ) When we were kids my mom would give us big chunky slices and send us outside. I'm guessing she was pretty smart since she knew we would probably be spitting the seeds out and maybe be having a contest. And we used to tease each other that if we swallowed a seed, it would start growing in our tummy. To my knowledge that has never happened - ha - but some great memories with my brothers.
While watermelon is great on its own - icy cold and cut into chunks or slices, it is pairs well with other ingredients. I love caprese salad and thought why not try to combine the two. And just because I was in a fun mood, I decided to cut them into stars and do the same with the mozzarella. They look festive and would be great for a patriotic holiday or you could just cut them into squares. I would definitely not leave out the glaze. I loved the concentrated flavor of the sweet balsamic vinegar with the melon. It was quite the flavor explosion in my mouth!

Watermelon Caprese Bites
These Watermelon Caprese Bites have that perfect sweet-salty combo taste that makes a refreshing summer appetizer or side salad. No need to spend time in the kitchen since they come together quick and can be on you table pronto!
Ingredients
- 4 round slices of watermelon
- Mozzarella cheese (fresh)
- 8 basil leaves
- 8 blueberries
- 1-2 tablespoons balsamic vinegar
Instructions
- Cut 8 stars out of the watermelon
- Cut 8 smaller stars out of the mozzarella cheese
- Place cheese on watermelon then top with blueberry and a toothpick
- Place on plate with a basil leaf and drizzle with glaze
- Serve immediately
