This Rustic Apple Galette tart is an easy dessert to make and just like a pie without the fuss. The tender apples are nestled in a flaky crust and sprinkled with a brown sugar, cinnamon and white sugar mixture.
Apple season is here and since we are lucky enough to have a tree in our backyard, I get to make all sorts of apple recipes.
I love making a galette because they only have a bottom crust and can be filled with about anything. In the past I have made peach and triple berry.
I tend to keep a pie crust in my freezer throughout the year, so whipping these up can be so easy peasy. Let's get to it - who's ready to get baking?
Ingredients
Step by Step Instructions
Step 1: peel and core an apple; cut in half (top to bottom) and use a sharp knife to cut into thin slices (about ⅛")
Step 2: place pie crust on parchment paper on a baking sheet and arrange apples as shown slightly overlapping; leaving about a 2" edge of dough
Step 3: keep arranging apples on pie crust until filled; again leaving about a 2" edge
Step 4: in a small bowl, mix together brown sugar, white sugar and cinnamon
Step 5: sprinkle cinnamon-sugar mixture over the apples
Step 6: fold the crust over the apples making tucks about every 2" around the entire pie crust
Step 7: brush an egg wash over the turned edge
Step 8: top with small cubes of cold butter and sprinkle additional cinnamon-sugar mixture on crust edge; bake at 375 for about 30-35 minutes until golden brown and apples are soft.
Fresh out of the oven - the aroma is amazing!
Recipe Notes and Tips
- For this recipe I used a pre-made crust that was about 12" in diameter
- If your apples tend to brown fast, brush with a bit of fresh lemon juice though when baked you won't see the brown
- Any cooking apple will be fine in this recipe - as long as apples aren't too juicy that could make your crust soggy. Ours are called Regent (local to our area) - Granny Smith or Braeburn would be good choices and feel free to mix different apple types together
- Dotting the cold butter on top will melt down and give the galette a great flavor
- As shown, the apples are almost single layer (just slightly overlapping) - this will prevent overcrowding and the galette will bake evenly.
- You may have noticed that mine is not completely round which is completely fine and gives it that "rustic" look
- Kick it up a notch with some raisins and/or walnuts
- Serve with vanilla ice cream, whipped cream and perhaps drizzle some caramel syrup on top
How to Store
- This Rustic Apple Galette tastes best when first made but you can make it ahead and served at room temperature
- To reheat place in a 350 degree oven for 5 minutes or so to warm it up
- Keep stored in an airtight container for up to two days - though it probably won't last that long 🙂
- I haven't tried freezing but would assume you could freeze after baked and cooled, wrap well and bring to room temperature before serving (again heating if desired)
Why you will love this recipe. It is so easy to make especially when using a pre-made crust. Seems super fancy so it is perfect for serving to guests for a delightful after dinner dessert.

Rustic Apple Galette
A super easy apple tart recipe that is perfect for fall
Ingredients
- 3-4 medium baking apples
- 1 tablespoon white sugar
- 1 ½ teaspoons brown sugar, packed
- 1 teaspoon cinnamon
- 1 egg
- 1 pie crust - 12" diameter
- 2 tablespoons butter, cold, cubed
Instructions
- Preheat oven to 350° and line a cookie sheet with parchment paper
- Peel and core apples, cut in half top to bottom and cut into thin slices (about ⅛")
- In a small bowl combine the sugars and cinnamon and set aside
- Place pie crust on parchment paper
- Place apples on crust going in a circle and slightly overlapping each (and filling middle too)- leave about 2" edge
- Sprinkle cinnamon-sugar mixture over apples
- Fold up outer edge of crust over apples; making tucks about every 2"
- Combine an egg with 1 tablespoon of water and brush edges of crust
- Sprinkle additional cinnamon-sugar mixture over crust
- Dot with cold, cubed butter
- Bake for about 30-35 minutes until crust is brown and apples are cooked
- Cool slightly and serve
