Calling all spud lovers today with this easy to make recipe. These mini potato rounds are topped with all the good stuff to make them the perfect bite-sized appetizer.
If you are like me, you might love ordering a loaded baked potato when out to dinner. The toppings of bacon, cheese, sour cream and green onions are so good!
Up your game day appetizers with these easy to make potato rounds and watch them disappear!
I also love potato skins with the same ingredients, but these are so much easier to make and no scooping out potatoes to have the shell.
What ingredients are needed for loaded baked potato rounds?
- Potatoes
- Bacon
- Cheddar Cheese
- Sour Cream
- Green onions
- Butter
- Salt
- Pepper
Once the potatoes are baked, they are ready to be topped:
How do you prepare loaded potato rounds?
Select two nice size russet potatoes (similar size if available), scrub the skin well (no need to peel) and slice into about ½" slices. Your oven should be pre-heated to 400 degrees.
On a baking sheet lined with foil, place potatoes on it that are brushed both sides with melted butter and seasoned with salt and pepper.
Bake for 35 minutes, turning over half way through.
Remove from oven and top with crispy bacon pieces (that you have prepared during baking process) and cheddar cheese. Pop back into oven until melted.
Top rounds with a dollop of sour cream and garnish with green onions slices.
Can potato rounds be made ahead of time?
This appetizer is best served when made. I did end up with some leftovers that I purposely did not top with the sour cream and green onions. I reheated them in the microwave but the rounds will lose their crispiness this way. They still tasted good though!
Potatoes are just one of those foods that go well with many other kinds of dishes. Make this recipe as a side dish too to serve with burgers, chicken or hot dogs.

Loaded Baked Potato Rounds
All your favorite ingredients on top of a crispy potato round! Perfect for game day or any time.
Ingredients
- 2 large russet potatoes, sliced into ½" rounds
- 5 slices bacon
- 1 cup cheddar cheese, grated
- ½ cup sour cream
- 3 green onions, green parts sliced
- 2 tablespoons butter, melted
- salt
- pepper
Instructions
- Preheat oven to 400°
- Cut scrubbed potatoes into about ½" slices (no need to peel)
- Line a rimmed cookie sheet with foil
- Brush each round with melted butter on each side along with salt and pepper
- Bake for 35 minutes; turn the rounds over halfway through
- While baking, cook the bacon until very crispy; cool, crumble and set aside
- When rounds are done (should be fork tender), top with about 1 tablespoon of cheddar cheese, a some bacon
- Return to oven to melt cheese (2-3 minutes)
- Remove from oven, add a dollop of sour cream and green onions
- Serve immediately
