I just love Mediterranean food since most recipes have fresh ingredients. On a trip my daughter and I went on a few years ago to Greece, I ordered at almost every meal a salad called "horiatiki". This is the official name for a salad that is made out of tomatoes, cucumbers, red onion, green peppers, feta cheese and kalamata olives drizzled with a good quality olive oil and sprinkled with dried Greek oregano. The combo of these ingredients are fantastic and definitely on the lighter, healthier side.
Today's recipe, Greek salad stackers, has all those ingredients, but is skewered for a different twist on a classic Mediterranean salad.
When I first had these in mind, I was thinking these would be perfect as an appetizer whether at your own party or taking along to a friends or a picnic. Just make the Greek salad stackers, place in a container and right before serving, drizzle with the olive oil and sprinkle the oregano. Easy, elegant and tasty. And while these make great appetizers, they would also make a nice presentation on a plate as an pre-dinner salad (maybe put three on a plate).
Just don't stop at this recipe. In the past couple of years I've made some other Greek inspired recipes that you might enjoy (again with fresh ingredients). Two of our family favorites - Chopped Greek Panzanella and Orzo Greek Salad. Both of these are easy to make too and the orzo salad is another good one to bring along on a picnic. I know I keep saying picnic but hey, I live in Minnesota and need to enjoy the great outdoors as much as I can!
Look at these fresh ingredients. It you are lucky enough to live by a farmer's market, you should be able to get some of these ingredients there.

Greek Salad Stackers

Ingredients
- 12 kalamta olives (I buy pitted)
- 1 large cucumber (cut 12 ¼
- 2-3 roma tomatoes (cut in 12 ¼
- 1 large green pepper (cut 12 ½
- Red onion sliced thin (about 2-3 slices then separate the rings)
- Chunk of Feta cheese (cut 12 1
- Olive Oil
- Dried Oregano
- Salt (if desired)
Instructions
- Assemble in this order (bottom to top) - cucumber, tomato, red onion, feta, green pepper and top with olive
- Skewer with a large tooth pick or fancy pick
- Drizzle with olive oil and sprinkle with oregano and a bit of salt if desired
- Serve immediately
Notes
I had to cut tomato slices in half to make fit on cucumber
Also you can adjust ingredients to make as many or few as you want
