It can be summer any time when you can enjoy these popsicles for a tropical get-a-way while having a staycation! This simple, sweet treat takes the classic cocktail and turns it into a frozen delight that can be made two ways - alcoholic and non-alcoholic for the kiddos!
Piña Coladas are one of my favorite drinks when we are vacationing. I enjoy sitting on the beach in a lounge chair, book in hand, sunscreen on (always this!) and sipping a tropical cocktail. Now I can make these frozen treats to keep on hand all summer long.
Sit back and relax with these Piña Colada popsicles. Make one batch with rum and one without so everyone can enjoy them!
These make the perfect treat for summer cookouts, dinner parties or any time you want a quick sweet treat.
What ingredients/items will you need?
- Full-Fat Coconut Milk
- Fresh Pineapple (preferred but canned would work okay too)
- Rum (I used Malibu but any kind will do)
- Yogurt
- Sugar
- Blender
- Popsicle Mold
How do you make/store these popsicles?
It is really simple to make popsicles. I find the best way is to put all the ingredients in a blender and be sure to mix it up well. Immediately place mixture into the molds, add sticks and place in the freezer for at least 6-8 hours (overnight works well too).
To make these kid-friendly, leave out the rum (then you only need 4 ingredients instead of five!)
The mold I have has a top so the sticks stay in place well. I just check them about an hour later to make sure they haven't sunk all the way in. Another way would be for you to leave the sticks out and add about an hour later.
If you don't have a mold or want to invest in one, small plastic cups would work well too.
Once popsicles are completely frozen, remove them by running some hot water over the mold. Don't run too long or they will begin to melt.
Popsicles can be store separately in a plastic bag or container in the freezer or keep in the mold until ready to eat.
The popsicles should last about 3-4 months if stored at a consistent temperature (honestly, mine never last that long 🙂 )

Ingredients
- 2 cups fresh pineapple, cubed
- 14 ounces full-fat coconut milk
- ⅓ cup vanilla yogurt
- 2 tablespoons sugar
- ½ cup rum
Instructions
- Place all ingredients into a blender
- Blend until smooth
- Pour into popsicles molds
- Freeze at least 6 hours or overnight
Notes
To make these for the kids, leave out the rum
