Yay TGIF! The long week is over and it's time to kick back, put your feet up and relax. I think we have all earned it so I've created this Creamy Limoncello Martini for you to enjoy this weekend. I'm thinking it is more of an after dinner type drink but feel free to enjoy it any time because it's 5 o'clock somewhere, right?
It's cool, refreshing and a reminder that spring is around the corner and summer will follow faithfully! It may be March madness month but for me that means that hopefully we can watch winter slip away and look forward to the next seasons. I'm ready, are you?
Ok, in all honesty this winter hasn't been so awful as previous years. Yes, we did have some cold weather and snow but it didn't start until near Christmas so it was more tolerable than most. Some of my friends love the winter to enjoy their skiing, snowmobiling, snow shoeing, etc. but I'm not just that type of gal (any more).
Back in my 20's (not saying how far back) I loved to downhill ski and cross country ski. A few friends and I belonged to a ski club where a few times a year we traveled to different slopes including one trip to Lake Placid. It was fun and I guess back then I didn't mind the cold.... Now I'm more like wanting to be outside on the deck and enjoying some tasty beverages when it is warm!
So in getting back to this martini. I did have a great idea that I thought of after the shoot and the drinks were gone. Don't you think this could be kicked up a notch with some whipped cream? Next time I'll be doing that and maybe sprinkle a bit of coconut because Easter is coming up and I'm sure the bunny would like this drink left out instead of some carrots! Hehe

This creamy milkshake type drink is perfect for a hot summer day or dessert!
Ingredients
- 2 cups vanilla ice cream
- 2 ounces vanilla vodka
- 1 ounce limoncello
Instructions
- Place all ingredients into a blend and whip until smooth
- Divide between 2 martini glasses
