This Easy Vanilla Chia Pudding is a perfect healthy breakfast or an anytime snack. Not only is it delicious but you will reap the benefits of protein, fiber and omega-3s to promote a healthy lifestyle.
I made a great discovery this year though perhaps not new to you! I have tried and loved making chia pudding. It's been my breakfast now for several weeks.
Sometimes you just want to eat something healthy and in the past I have made a Peach Raspberry Smoothie or Pineapple Coconut Mango as a way to start my day. But what I really like is this can be made ahead of time for an easy breakfast.
Ingredients
- chia seeds
- almond milk
- honey
- vanilla paste
- salt
- fresh fruit

Instructions
In a medium bowl* place the almond milk and add in the chia seeds, vanilla paste, honey and salt.
*I usually make in a canning jar but wanted to show you close up pictures of ingredients and steps.
Stir to combine the ingredients.
Top Tip
Chia seeds will sink to the bottom of the liquid. To avoid them clumping, I shake the jar about every 5 minutes for about 15 minutes. This will ensure no clumps! Also for best results, let sit overnight in refrigerator.
Substitutions
This Easy Vanilla Chia pudding can also be made with the following.
- Milk - dairy milk, oat, soy or coconut
- Sweeteners - maple or agave syrup
- Toppings - any kind of fruit, nuts or granola would be delicious
Note: some milks are sweeter than others and may not need additional sweetener adding.

Did I also mention that these make a perfect grab and go breakfast. Just top with your favorite toppings, put a canning lid on top, grab a spoon and away you go!
Storage
The pudding will stay for up to a week in the refrigerator. Just be sure to have it tightly sealed.

- 4 tablespoons chia seeds
- 1 tablespoon honey

- Repeat shaking about every 5 minutes for 15 minutes
