When down the stairs there will be such a clatter, you will set down your coffee as you hear all the chatter. You'll be there to greet them in a flash, and present to them this Cranberry Skillet Bread that will be a smash!
I hope you enjoy this recipe today as it has become one of our go to breakfast items on Christmas day. Along with some fruit, mimosas, hot cocoa for the kids, and some cinnamon rolls (we like the Pillsbury brand), we munch on this bread so we can save room for our big dinner!

- fresh cranberries
- butter
- sugar
- flour
- salt
- cinnamon
- vanilla extract
- milk
- baking powder
- egg
How do you make Cranberry Skillet Bread?
It is really easy to make this bread. It will take about 10 minutes to prep and about 25 minutes to bake - so you can enjoy this in under an hour!
Start by combining the dry ingredients, then set aside.
Next mix the wet ingredients together with the sugar.
Combine the dry mixture to the sugar ingredients and mix well.
Have your oven preheated to 350 degrees. After batter is done, pour into a well buttered cast iron skillet.
Top with cranberries, sugar and bake for 25 minutes.

We especially love that the bread is not too sweet. The cranberries provide some tang and with what sugar is sprinkled on the top, it caramelizes a bit for just the right amount of sweetness.
What other ingredient could go into Cranberry Skillet Bread?
I was thinking that some orange flavor would be good by zesting about ½ orange and adding it into the batter.
You could also place some pecans on the top for some added crunch.
For many years I would make a big brunch for Christmas morning and then serve a big Italian dinner at night with my homemade ravioli and sauce. I only make ravioli once a year and it is a real treat!
A couple years ago we did away with a big breakfast and now just have some breads, fruit and drinks. The big meal is now served around 1 p.m. and everyone thought this worked better. By having a lighter breakfast, everyone could really enjoy the ravioli. Everyone fights over the leftovers too!
In addition to having this bread, you could also serve Cranberry and Orange Biscotti or Pumpkin Spice Pinwheels.

Cranberry Skillet Bread
A delicious Christmas Bread served in a skillet
Ingredients
- 6 tablespoons butter, melted
- 2 cups fresh cranberries
- ¾ cup sugar
- 1 cup flour
- 1 ½ teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup whole milk
- 1 large egg
- ½ teaspoon vanilla paste or extract
- 1 tablespoon butter
- 2 tablespoons sugar
Instructions
- Preheat oven 350°
- Use one tablespoon butter to grease a 10" iron skillet (will not need all)
- In a medium bowl whisk together the flour, baking powder, cinnamon and salt
- In a large bowl combine the ¾ cup sugar, melted butter, milk, egg and vanilla
- Add dry ingredients to wet and combine well
- Scrape batter into skillet
- Top with 2 tablespoons sugar and cranberries
- Bake for 25-30 minutes
