I decided to go with a tropical theme because as I was making this smoothie recipe last weekend, we were also preparing for our Florida trip.
Every year around this time, we head to visit the DIY Guy's brother and sister-in-law. They live in a cool town called Treasure Island, and live on the intercoastal waters. It's a great time to relax, head to the beach and do some boating. Some of the time, us "sisters" hang out and go to beach. Last year we found a perfect spot in St. John's pass, which is about 5 minutes from their place.
We pack up some food/drinks, head over, plug the meter, rent chairs and just hang out. The guys will head out on the boat, see what they can catch and provide for the family! We also go to some fun restaurants and whenever possible eat on the beach. One of my favorite places is called Frenchy's - they have the best She Crab soup. They have about 4 locations in Clearwater Beach area and it's always a highlight for me! Each time I savor a spoonful, I try to capture the flavors to see how I could give it an attempt at home.
Though since I'm in Minnesota, the ambiance of not having the beach, probably wouldn't have the same experience for me. Maybe I just need more trips to Florida throughout the year! A girl can dream, right?

PINEAPPLE COCONUT MANGO SMOOTHIE
This smoothie will make you feel like you are in the tropics!
Ingredients
- 5.3 oz. vanilla yogurt
- ½ cup orange juice
- 1 cup fresh mango cubed
- 1 cup fresh pineapple cubed
- 1 tablespoon honey
- ¼ cup coconut (I used roasted coconut from Trader Joe's)
Instructions
- Combine all the ingredients in a blender and whip until smooth (you want the coconut to get fine and not stay chunky)
- Divide between glasses and enjoy!
