I'm really shocked that today is May 1st. As they say April snow showers bring May flowers. It's really true as we spent half that month with snow on the ground! But alas now it is getting really nice out and the flowers are starting to pop up. I mostly plant perennials since they are low maintenance (and maybe I'm a bit lazy when it comes to gardening-true confession!) I'm big into hostas and like to plant different varieties that compliment each other. For my pots that are either hanging or on the deck, I'll get annuals with bright colors. Soon it will be time to hit up some of the local nurseries.
When I think of flowers this time of year, it makes me think of my mom as she loved flowers and I always bought her a huge hanging basket for her deck for Mother's Day. Maybe for many of you, you are lucky to still celebrate with your mom. If so, how about treating her to a special brunch this year?

Fruit Yogurt Granola Tarts
These bite sized Fruit Yogurt Granola Bites would be a great addition to your Mother's Day brunch table. Use your favorite yogurt on top of the crunchy oatmeal and honey tart shell then add fresh fruit berries to finish it off!
Ingredients
- 1 ½ cups old fashioned oats (not quick)
- ½ cup sunflower seeds
- ¼ teaspoon cinnamon
- 1 teaspoon vanilla paste (or extract)
- ¼ cup honey
- 3 tablespoons melted coconut oil
- 1 tablespoon egg white
- 8 oz. vanilla yogurt (or any flavor of your liking)
- 1 cup fresh berries (any assortment)
Instructions
- Preheat oven to 325 degrees.
- Spray with vegetable spray a pan with 1 ½" diameter circle (mine was called a mini whoopie pan - you could also use a mini tart pan)
- In a medium bowl combine the oats, seeds, cinnamon, vanilla, honey, oil and egg white mixing well
- Divide the mixture into 24 and press into the pan
- Bake for 18-20 minutes until light golden brown; then lightly press each tart with a spoon
- Let cool in pans about 10 minutes and then carefully remove and cool completely on racks
- At this point set them aside until you are ready to assemble tarts (can be made a day or two ahead and just keep in airtight container on your counter)
- Place about one tablespoon of yogurt on tart and then top with a fresh berry
Notes
These are best when they are assembled and served immediately. If left too long the granola will begin to soften.
An idea to do this would be to have the granola tarts on a plate and have guests top with their favorite yogurt and a berry
