Overnight Pumpkin Spice Oatmeal
I hope by now you have put away your white clothes (yes, no white after Labor day!) and are turning your thoughts to fall. Because once your turn your calendar to September, it is getting to be cooler days and all access pumpkin season! I can't think of a better way to welcome fall (and get your day off to a great start) than making overnight oatmeal.
Just toss the ingredients into a big bowl, let sit overnight and enjoy in the morning. I bet you can even sleep in a little later too - now that sounds really good to me too.

I hope you had a really great summer. Ours went by in a blur - one minute is was Memorial Day and then next it was Labor Day. We were super busy about every weekend and I didn't even blog much this summer as you may have noticed.
But now I am ready to get back in the saddle and planning out some recipes to try. I have to admit most of them involve pumpkin but tis the season for that so be sure to stop back to see what else I will be making. Feel free to leave a comment and give me some more ideas too.

- Pumpkin Puree
- Old Fashioned Oats
- Milk
- Cinnamon

How are overnight oats made?
Well, this is the super easy part. Other than the pecan topping and maple syrup drizzle, all the ingredients are mixed together, divided into individual containers, covered and left in the refrigerator for at least 6 hours (though overnight is best).
How easy is that??
We liked our oats with crunchy pecans but you could substitute other kind of nuts, pumpkin seeds, etc.
And of course, don't forget to drizzle a bit of maple syrup too.
Can overnight oatmeal be heated?
I've heard this question a lot and the answer is yes.
While the oatmeal is perfectly great tasting from the refrigerator (plus think grab and go for something easy on the run), you could microwave for about two minutes.

Overnight Pumpkin Spice Oatmeal
These overnight oats are easy to make and ready when you wake up!
Ingredients
- ⅓ cup vanilla yogurt
- ½ cup pumpkin puree
- 1 cup oats, old fashioned not quick
- ⅔ cup milk (any kind - soy or almond too)
- ¼ teaspoon cinnamon
- 1 teaspoon vanilla paste (or extract)
- 2 teaspoons maple syrup
- 1 teaspoon pumpkin spice
- 2 tablespoons chopped pecans (optional)
Instructions
- n a bowl combine all the ingredients (except pecans)
- Cover and let sit overnight in the refrigerator
- Enjoy the next day - top with pecans and drizzle with maple syrup if desired

This looks and sounds so yummy! I would definitely be tempted to top this with whipped cream. I love overnight oats, but I can't eat them cold, I have to heat them up! If I eat them cold, I stay hungry, something about my body refuses to believe that cold oatmeal is satisfying food, haha. This is a must-try for me though, and I have two cans of pumpkin puree in my pantry whispering my name!
