Are you looking for a last minute, easy, peasy treat for Cinco de Mayo? These white chocolate dipped fresh strawberries would make something so simple seem so elegant - like you did a lot of fussing.
They look so pretty and taste fantastic (no one has to know you whipped these up in no time!) I've also got a whole day of ideas for you to try too from breakfast to dessert.
We all know breakfast is the most important meal of the day, right? How about starting out with these Churro Pancakes? These fluffy pancakes are rolled in cinnamon sugar and topped with a slightly spicy chocolate sauce. Definitely worth getting up for!
Let's move onto lunch. When we vacation, I'm known to just eat guacamole for a meal. I love dipping salty tortilla chips into the creamy mixture. And I admit to having a tasty margarita too - this one is part margarita and part pina colada.
While I love my tacos and burritos, we have really enjoyed this Mexican Quinoa Skillet Dinner.
Let's not forget dessert! Mexican Fried Ice Cream is always a good choice!!

Cinco de Mayo Strawberries
An easy treat to celebrate Cinco de Mayo!
Ingredients
- 10 large strawberries cleaned with a wet paper towel
- 2 ounces white chocolate melts
- green sprinkles (I used the larger ones)
Instructions
Follow the instructions on the chocolate bag to melt the chocolate
Dip the strawberries in and cover with chocolate about ⅔’s way up; let the excessive chocolate drip off
I used my fingers to sprinkle the sprinkles on.
Set on wax paper until set (about 10 minutes)
Best eaten day made
