Welcome to the 4th annual Christmas Cookie Recipe Swap reveal day! This event is one of the highlights of my holiday season and one that I co-hosted this year (thanks Julie for the invite!). I'm looking forward to seeing who was paired up with who and what cookies they made. I was lucky to be paired with a good friend of mine - Lisa from Cooking with Curls and she sent me this wonderful Triple Chocolate Peppermint Cookie recipe. All I can say is wow - these are so easy to make and full of great flavor. If you like chocolate (and who doesn't!) and peppermint, this is the the perfect holiday cookie for you!
Lisa and I go back quite a few years and not only does she makes some great recipes and cocktails but she is also one of my go-to people when I might want to bounce an idea, have a question, or just do a bit a chit chatting. We've never met in person but hopefully we can some day! I'm so glad she shared this recipe with me and I know it will become of my new holiday favorites. The DIY Guy has already given his approval by taste testing them out of the oven.

Triple Chocolate Peppermint Cookies
Minty and chocolate-y!
Ingredients
- 1 ¼ Cups unsalted butter, softened
- 2 Cups granulated sugar
- 2 Large eggs
- 1 Tablespoon pure vanilla extract
- 2 Cups unbleached, all-purpose flour
- ¾ cups cocoa powder
- 1 ½ Teaspoons baking soda
- 1 teaspoon salt
- 9.90 Ounce bag White Chocolate Peppermint M&Ms (about 1 ½ cups)
- 10 Ounce bag Ghirardelli bittersweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Place parchment paper/silpat on baking sheets, set aside.
- Beat butter, eggs, sugar, and vanilla extract together in a large bowl until light and fluffy.
- Combine the cocoa powder, flour, baking soda, and salt then add to the butter mixture. Beat just until well combined.
- Stir in M&Ms and chocolate chips.
- Using a #30 cookie scoop {one ounce} drop rounded cookies onto prepared baking sheets {9 per pan}.
- Bake in preheated oven until set, but still soft and chewy, about 16 minutes.
- Remove from oven and allow to cool on baking sheet for 3 minutes before moving to a wire cooling rack to cool completely.
- Store in a sealed container.
