- Use butter and no other substitutions (like margarine); you can use either salted or unsalted butter
- Line your cookie sheets with parchment paper for even baking
- Dough can be frozen if well wrapped for up to a month before baking
- Cookies can be frozen after made for up to three months
- Different colored sugars can be used if you aren't a fan of red or green

Cranberry Orange Spice Cookie
These shortbread Cranberry Orange Spice Cookies are sure to become a family favorite for the holidays. The combination of the crystallized ginger, dried cranberries and fresh orange peel are a tastebud delight!
Ingredients
- 2 ¾ cups flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup soft butter (no substitutions)
- ¾ cup sugar
- 1 egg
- 1 teaspoon vanilla paste or extract
- ½ cup finely chopped dried cranberries
- ¼ cup finely chopped crystallized ginger
- 2 teaspoons freshly grated orange peel
- 1 teaspoon pumpkin pie spice
- 3 tablespoons green sugar crystals
- 3 tablespoons red sugar crystals
Instructions
- Make the dough by combining the flour, baking soda and salt
- In a large bowl mix on medium speed the butter and sugar for 1 minute until creamy
- Add the egg and vanilla then beat until well mixed
- Reduce speed to low and add in flour gradually, dried cranberries, ginger, orange peel and pumpkin pie spice mix
- Form into a ball then on a lightly floured surface, divide the dough in half and shape each into a 10" squared off log
- Wrap each log with plastic wrap and refrigerate at least 10 hours (or 2 in freezer)
- Preheat oven to 350° and line cookie sheets with parchment paper
- Place the green sugar on a piece of wax paper then unwrap one log and roll/pat sugar on log
- Cut into ¼" slice and place on cookie sheet
- Bake for 14-16 minutes until golden brown
- Cool completely on wire rack
- Repeat other log with red sugar
- Cookies can be stored in a tight container room temp for 1 week or frozen up to 3 months
